Winemakers David Powell and Craig Isbel have extensive experience in producing wines from Rhone grape varieties. It was therefore an obvious choice to use there expertise to develop Solstice.
The grapes are destemmed and fermented with 40% whole berries with two pump overs per day. Fermentation takes between 8-10 days, grapes are basket pressed, with Malo in Oak.
Fifty percent new and fifty percent second use French Oak from Tonellerie Radoux Troncais Forest are used in both red wines.
